Sally and Anna’s banana bread

I thought I’d share a recipe with you that Anna and I created, adapted from Simply Recipe’s banana bread recipe. This is a great recipe if you don’t want to show up empty handed somewhere but you don’t have much time, or you quickly need to whip up something for some guests coming over. One bowl, basic ingredients, no mixer!

 

3 or 4 bananas, smashed (if you freeze your old bananas like I do, make sure they are thoroughly thawed)

1/3 cup of butter, melted

1/3 cup brown sugar (can be reduced)

1/3 cup granulated sugar (can be reduced)

1 egg, beaten

1 teaspoon vanilla

1 teaspoon baking soda

Pinch of salt

Large pinchfuls of nutmeg, ground cloves, and at least 1 teaspoon of cinnamon

1 cup flour

1/2 cup wheat flour

juice of an orange

Preheat oven to 350 degrees. Add melted butter to smashed bananas in a large bowl. Mix well. Mix in sugars, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and then stir in. Add the spices, then the flour (perhaps mix the spices into the flour before…just thought of that). Mix well then add in the orange juice in and mix until combined! Add to a buttered 4×8 loaf pan, or if you are lacking one like me, just a 9×13 does the job! Cook for 1 hour (changes based on type of pan used).
